What is Perfect Til Chikki Delight
Tll Chikki is a crispy crunchy brittle made with the wholesome goodness of roasted sesame seeds bound together with melted sugar or jaggery. Sesame seeds support immunity and are good source of fiber, antioxidants, minerals and B vitamins to name a few. Because of these health benefits and its warming nature, til chikki is a popular sweet treat enjoyed during the winter months, especially around festive occasions like Diwali and Makar Sankranti.

Ingredients for Sesame Brittle
For Measurements refer to the RECIPE CARD further below.

- Sesame Seeds – For this recipe, I used market bought roasted sesame seeds.
- Sugar – White sugar is used here. You could make with jaggery too.
- Ghee for enhancing shine to chikki and for greasing work surface
- Pistachios – a few slivers to garnish
How to make Perfect Sesame Chikki with Sugar

Prepping
1. In a flat bottom pan, slightly warm the market bought roasted sesame seeds. Warming removes moisture if any, in the sesame seeds and gives it a crunchy bite. Put off flame and set aside to cool. PRO TIP – Use premium quality sesame seeds devoid of any grit particles.
2. Grease a work counter. I use kitchen top ensuring that it is perfectly clean to work. Grease it well with ghee or oil. Also grease a rolling pin. Keep parchment paper handy.
How to make Til Chikki
3. Now in a heavy bottom pan, take a teaspoon of ghee and heat it on medium flame. To this add sugar.
4. Heat sugar on low to medium till it melts. You may swirl the pan or use a spatula to stir sugar so that heat dissipates in all directions and sugar melts uniformly. PRO TIP: This step entails working on low to medium flame. The idea is to melt the sugar with least browning (caramelization) of sugar.
5. When you see the sugar has started to melt though not completely, add a few drops of lime to prevent crystallization of sugar.
6. Gradually the lumps will dissolve and the sugar will melt into a light golden to amber-colored syrup. This is the stage for the real action!! PRO TIP – Maintain low flame.
7. Now quickly add the sesame seeds and combine together. Put off flame.
8. Immediately, transfer the mixture onto greased surface. With the help of spatula even out the sesame mixture, sprinkle a few slivers of pistachios. Now quickly, roll out the sesame mixture as thin as possible using a rolling pin before brittle turns hard. If need be even out its round shape using a kitchen scissors. Repeat process for remaining sugar and sesame seeds.

9. Til Chikki Delight for celebration is ready to serve. When cool, store in air tight container.
What to serve with
Serve at a celebration table along with other sweets such as Kaju Katli, Dhaliya chikki and a cup of hot Karak Chai or Caffe de Latte.

The chikki has become hard before I could roll it completely
As mentioned in the post above, one needs to be quick in transferring the chikki sugar mixture onto a work surface and roll. Keep surface, rolling pin and knife greased before hand.
Can til chikki be made with jaggery
Yes it can be made using jaggery. You need to watch out for the correct stage of jaggery syrup to add sesame seeds.
Is til Chikki gluten free and vegan
Til Chiki is gluten free . It can also be made vegan by using oil instead of ghee.
