Schezwan Paneer Paratha | Chilli Paneer Paratha | Spicy Cottage Cheese Flatbread | How to make  Schezwan Paneer Paratha  at home   with video and step by step photos is an Indian flatbread with cottage cheese stuffing that is perked with homemade Schezwan Sauce and other Indo Chinese flavours.

Spicy Cottage Cheese Flatbread is a mildly fragrant spiced paratha recipe. It makes a filling breakfast, lunch or dinner. As with any other paratha, this too is convenient-to-pack food to have during office rush hours or when behind the wheel.

I have my reservations about fusion recipes. However, it gives me gratifying peace  that my family enjoys this fusion paratha. Hence, with great delight , I am writing this post on this Chilli Paneer Paratha.  The highlights of these parathas are

  • great breakaway from the regular breakfast or mealtime menu

Whenever you face a similar dilemma, just go ahead and make these tasty, wondrously crisp, mildly spiced parathas.  You will be glad that you did so. Keep in mind, it is always a smart idea  to have some stocks of homemade sauces and pastes such as Schezwan Sauce, Hot Chilli Garlic Sauce, Coriander Masala  paste, Sweet Tamarind Chutney, Mint and Coriander Chutney, Marinara sauce for pasta. Believe me, it will save you a lot of trouble.

What is Schezwan Paneer Paratha

Schezwan Paneer Paratha is whole-wheat flatbread stuffed with Indian cottage cheese. This is an adaptation of the Paneer parathas from Punjabi cuisine. Here Paneer is combined with Schezwan sauce, spring onions, soy sauce and vinegar to give an interesting Indo-Chinese twist.

Ingredients for Chilli Paneer Paratha

  • Paneer Indian Cottage Cheese – Can use homemade or store bought .stock should be fresh.
  • Onion finely chopped, Spring onions- finely chopped, Ginger- garlic- green chilli, Vinegar
  • Soy sauce– Use a good quality soy sauce.
  • Schezwan sauce– This is the star ingredient. Can use the store bought or home made. Taste of the cottage cheese stuffing depends on this sauce. Mildly spiced schezwan sauce is used in the recipe here.
  • Salt , black pepper- Use according to individaul preferences.
  • Whole wheat flour – this is the same flour that is used for making the regular roti.
  • Carom seeds ajwain
  • Nigella seeds kalonji
  • Dried fenugreek leaves crushed kasuri methi
  • Chili flakes
  • Oil

How to make Schezwan Paneer Paratha

Paneer Stuffing for Schewan Paratha

Heat oil in a pan.

Add ginger and garlic. Sauté for a few seconds.

Now add chopped onions.

Sauté until onions turn translucent, Add the white parts of spring onions.

Add green chili and sauté.

Add capsicum and continue to sauté Add salt and stir fry till liquids evaporate.

Furthermore add vinegar and Schezwan sauce. Mix well.

Now add the crumbled paneer and combine everything.

Lastly, add the green parts of spring onions. Sauté until stuffing is dry.

Switch off the flame. Set aside to cool.

1 saute ginger garlic
3 add green chillies salt and capsicum
5 add crumbled paneer
2 add onion
4 add vinegar and sauces
6 add black pepper spring onions

Dough for Chili Paneer Parathas

Take flour in a wide bowl.

Add salt, carom seeds, nigella seeds, kasuri methi and chili flakes

Add oil and combine.

Finally add water gradually and form a soft pliable dough.

Grease the dough with oil . Cover and keep aside for 2 minutes before making parathas.

4 dough is ready

Making parathas

Divide dough into equal size balls.

Take a ball and roll out partly.

Brush some oil in its centre.

Add two teaspoons of paneer stuffing.

Bring the edges together and pinch to seal.

Sprinkle flour and roll out into a paratha.

Cook on griddle/tawa over medium flame,  Drizzle a few drops of oil in between to make the paratha crisp and light brown in color

Cook the paratha on both sides.

Finally remove the paratha onto a plate

Make rest of the parathas in similar manner.

1 form dough balls
4 seal edges
7 cook paratha
2 roll halfway apply oil
5 sprinkle flour and roll
8 flip paratha
3 put filling
6 apply oil on skillet
9 paratha is ready

Serving suggestions

Enjoy these lip smacking mildly spiced parathas while they are warm. Surely, they are delicious on their own. Alternatively, here are some ideas for what to eat with..

Plain curd, Vegetable Boondi Raita, Masala Boondi Buttermilk, Mint Lassi, Murabba or Plum Sauce

Oh! Don’t forget the papad and pickle achaar.

Tips for Perfect Schezwan Paneer Paratha

The paneer stuffing must not be soggy. Dry the liquids completely. Do not cover while the stuffing is hot.

Adjust the spices and condiments level to suit individual preferences

You may use ghee to roast the paratha but I wouldn’t suggest. Parathas may turn out a bit heavier for the stomach

Ingredients
  

For Stuffing

  • 150 gm fresh paneer cottage cheese
  • 1 cup onions finely chopped
  • 2 sprigs spring onions finely chopped
  • 1 tsp chopped ginger
  • 1 tsp chopped garlic
  • 2 green chilli chopped
  • 1 tsp vinegar
  • ½ tsp soy sauce
  • 1 -2 tsp schezwan sauce
  • 1 tbsp oil
  • Salt to taste
  • ¼ tsp black pepper powder optional

For Dough

  • 1.5 cup wholewheat flour
  • ¼ tsp carom seeds ajwain
  • ¼ tsp nigella seeds kalonji
  • 1 tsp dried fenugreek leaves crushed kasuri methi
  • ½ tsp salt adjust
  • ½ tsp chilli flakes
  • ½ tsp oil as shortening + more for roasting the parathas
  • Water to knead

Instructions
 

For Paneer Stuffing

Are these Schezwan Paneer Parathas healthy

Besides carbohydrates, whole wheat provides fibre.  Paneer stuffing is rich in protein. Being healthy or not, would largely depend on how much oil goes into its making and the extent to which you indulge into these parathas.

How to make Schezwan parathas for kids

Omit chilli flakes in the dough. Bring down the sauces levels as per taste. You can omit green chilli.

Using paneer and giving the filling an Indo Chinese flavour, wow totally mouthwatering, I too have reservations about some fusion recipes but I know these schezwan paneer parathas is one recipe that I’m going to try out soon.
