Tiranga Pulao recipe | Three color Pulao is a colorful Indian rice dish inspired by the Indian national flag. It is made with three distinct flavors and colors – tomato and onion flavors (orange/saffron color), onion and cashewnut (white color), coriander & peas (green color), along with basic spices.

3 Flavors Pulao Recipe makes a great option to celebrate patriotism vibes. Tricolor rice is a delightful and festive way to infuse rice with vibrant colours and refreshing flavours.

What is Tri Color Pulao

Tri color Pulao is a flavorful rice dish inspired by the colours of the Indian Flag – Saffron, White and Green.

For Saffron/Orange – mainly tomato is used. You could also add robust orange carrots here , the same ones that I used for Gajar Ka Halwa For White – it is rice with lightly sauted onions and cashew nuts. For Green layer – Coriander paste and green peas are used here.

Ingredients

For Measurements refer to the RECIPE CARD further below.

  • Rice – Use basmati variety or any regular one.
  • Onions, cashew nuts (For White color) – Lightly saute onions and cashew nuts.
  • Coriander garlic puree & fresh peas (For Green color)– Puree coriander and garlic. Blanch fresh green peas.
  • Tomato – garlic -onion (for Orange/saffron color) – Make a puree
  • Spice powders – salt, red chili powder, coriander powder, turmeric powder.
  • Whole spices – cloves, cardamom, cumin seeds.
  • Lime juice – for slight tanginess.
  • Salt – as needed
  • Cooking oil – Any preferred cooking oil.
  • Water – for cooking rice.          

How To Make Tiranga Pulao Rice

1. Heat a tsp of oil in a heavy bottom pan.

2. Add cloves and cardamom.

3. Then add water and salt. Let water come to a boil.

4. Now add the rice and let it cook till soft. PRO TIP: You may drain excess water if any. Rice must not be mushy.

5. Divide this cooked rice into 3 portions.

6. Heat half a tablespoon of oil in another pan.

7. Add garlic coriander masala puree and sauté.  PRO TIP: Sauté on low heat so as not to change the the green vibrance of garlic coriander paste

8. Then add salt and mix.

9. Now add the blanched green peas and sauté for a minute.

10. Thereafter add turmeric powder and coriander powder. 

11. Add one portion of cooked rice to the puree.

12. For tanginess, add some lime juice. Season it and mix well.

13. Cover and keep aside.

14. Heat half a tablespoon of oil in another pan.

15. Add cumin seeds and let it crackle

16. Then add blanched tomato -garlic-onion puree, coriander powder and red kashmiri chili powder. PRO TIP: Alternatively, you could add paprika powder.

17. Sauté for a minute and then add the cooked white rice.

18. Heat half a tablespoon of oil in a heavy bottom pan.

19. To this add sliced onions and sauté for two minutes.

20. Then add split cashew nuts and salt as needed. Sauté well.

21. Now add portion of plain rice, mix well and sauté for two minutes.

22. Transfer rice to a serving plate without mixing up the colours. The three colors of the pulao should be distinctively visible

What to serve with

Serve Tiranga Pulao rice with Sai Bhaji and Vegetable Boondi Raita alongside Salted Mint Lassi and some fries or crackers. Serve alongside Chhole Masala, Black Eye Peas Curry or Paneer Makhni

Tips for Perfect Tri Color Pulao

  • Preferably use a long grain variety. However a regular variety also goes well.
  • Customize veggies according to your preference, but don’t go overboard with them.
  • Adjust spices according to your preferences. Use minimal spices, because we want to bring out the flavours of aromatic veggies.

FAQ

Basmatic variety is recommended, but you could use any regular one.

Yes you can make it ahead of time and then assemble when guests arrive.

Ingredients
  

Plain rice

  • 1.5 cup basmati rice
  • 1 tsp Salt
  • 1 tsp oil
  • 2 cloves
  • 1 cardamom
  • 3 cups water adjust as needed
  • Divide the above cooked rice into 3 portions

White color rice

  • 1 portion cooked plain rice
  • 1 small onion sliced 50gm
  • 7-8 cashewnuts halved
  • ½ tbsp cooking oil

Green color rice

  • 1 portion cooked rice
  • ¼ cup coriander garlic puree 60 gm
  • 1/8 cup blanched green peas 20 gm
  • ½ tsp coriander powder
  • ¼ tsp turmeric powder
  • Juice of half lime
  • Salt as needed
  • ½ tbsp oil

Orange color rice

  • One portion of cooked plain rice
  • 1/4 tsp cumin seeds
  • ¼ cup blanched tomato- garlic- onion puree
  • ¼ tsp red chili powder
  • ½ tsp coriander powder
  • Salt as needed
  • ½ tbsp oil

Instructions

  • Then add split cashew nuts and salt as needed. Sauté well.
  • Now add portion of plain rice, mix well and sauté for two minutes.

Assemble Tiranga Pulao

  • Transfer rice to a serving plate without mixing up the colours. The three colors of the pulao should be visible distinctively.

How to serve

  • Serve Tiranga Pulao with vegetable boondi raita of sai bhaji
