Paneer Frankie Street Style | Paneer Frankie Wrap is a popular Indian street food sensation. This conveniently rolled and hand held meal will keep you content through your day’s hectic schedules.

Paneer Frankie Roll specifically is a delectable Indian street food that’s sure to leave your taste buds dancing with delight. A nostalgia to remember in which paneer (Indian Cottage Cheese) is infused with an explosion of flavors, all enveloped in a soft wrap.

My First Taste of Frankie

It was in 1980s that I got the first taste of Paneer Frankie Wrap | Paneer Frankie Roll at Linking Road Mumbai. From what I recall, it was a modest shop right off the main road. But the explosion of taste and flavors is still alive and fresh. Now frankies have gained widespread popularity and trending. Frankie stalls can be found in bustling markets, near colleges, and on street corners. Nowadays, frankies, kathi rolls and wraps have become synonyms of one another.

What are Frankies

Frankies are wheat flour wraps with marinated and cooked stuffing of meat or cottage cheese along with some other veggies, sauces and spices. All these put together, form an interesting variety of flavors and textures.  It’s a delightful combination of textures and tastes that’s both comforting and exhilarating: Frankie rolls have originated in Mumbai. At large, these bear resemblance to Kathi rolls but there are differences.

Ideally for frankies, the bottom is brushed with a thin layer of cooked egg. Then on this is placed the stuffing of meat or veggie.

Story behind Frankies

The credit for inventing Frankies goes to Amarjit Singh Tibb, a national-level hockey player and pharmacist, who got inspiration from a Lebanese pita wrap. This gave him an impetus to start something very similar in India. He intended to give a simple and convenient food choice for the Mumbai’s busy population. After a lot of experimentation, he gave a unique twist, by using thinner wheat flour wrap, similar to a tortilla or a crepe, to create a more lightweight version. These frankies made it easier and affordable for people to enjoy a meal on the move. From then on, it has led to a widespread popularity of Frankie as a street food Mumbai and beyond.

Frankie has a choice of fillings such as marinated meats or vegetarian options like paneer (Indian cottage cheese). These fillings are typically cooked with a blend of spices, sauces, and vegetables, giving Frankie its characteristic tangy and spicy flavor.

Marinated Paneer – Use fresh paneer (cottage cheese). You may make it at home or use store bought paneer. Fresh curd, spices such as salt, coriander powder, red chili powder, turmeric powder, garam masala powder, chaat masala powder, garlic , ginger, green chili and lime juice.

Get some soft pillowy paneer such as malai paneer. Hard and tough paneer may ruin all your efforts. I am fortunate enough to get the freshest stuff from WestZone Fresh Supermarket. They have awesome raw malai paneer.

Marinated Paneer Stuffing for Frankies – The above marinated paneer is sauteed in oil with onions and bell peppers. Seasoning is adjusted . Add a bit of red-orange food color AKA tandoori food color, dried fenugreek leaves (kasuri methi leaves) and coriander leaves

Wrapper sheet –  Use either whole wheat flour or equal amounts of whole wheat and all-purpose flour, with a bit of salt and oil. Flavoring options- chili flakes and shahjeera. Make a soft pliable dough by adding water gradually.

Salads and condiments Coriander mint chutney, Schezwan chutney, tomato ketchup, eggless mayonnaise.

How to make Paneer Frankie at Home with step by step instructions

How to Marinade Paneer

1. Firstly, in a mixing bowl take yoghurt/curd. To this curd, add ginger, garlic and green chili.

2.Then add spice powders – red chili powder, salt, garam masala, coriander powder, turmeric powder and chaat masala. Finally add lime juice.

4. Add the marinade to paneer. Cling wrap and refrigerate for at least 1-2 hrs.

10. In a mixing bowl add whole wheat flour, all-purpose flour, salt, caraway seeds, chili flakes, and oil.

14. Cook each wrapper sheet on skillet till half done. Flip and cook on other side in the same way. Keep them covered with a clean cloth to prevent drying.

16. Place two or more tablespoons of paneer filling in a cylindrical manner in the centre of the sheet. Then top with onion-cucumber salad and green coriander chutney.

18. Once again slightly warm it on skillet. (optional step)I recommend it.

What to serve with

Serve with Coriander Mint Chutney or Schezwan chutney. Enjoy while sipping Mint Lassi or Karak Chai.

For Finger Food Appetizer cut each Frankie into 2-3 pieces and secure each piece with fancy
toothpicks.

Tips

The dough should be soft and pliable.

Always keep the half done wraps covered or they tend to go dry.

If you do not like raw onions in salad then just use cucumbers or lettuce for crunch.

Do not overcook the wraps or else they will become quite hard and will be difficult to roll.

Remember, wraps and rolls is all about symphony of variety of textures and flavors brought together in an enclosed wrap. Some of my revelations that I am sharing are

The best combination of flours for frankies that has worked out for me so far is 50:50 of whole wheat flour and all-purpose flour. It makes soft wrappers.

Spreading mayonnaise, butter or thin layer of egg( omelet) prevents the wrapper sheets from turning soggy.

Adding some salad to the stuffing creates a crunch. The salad must be vibrant and robust, not drenched in its own juicy water. control salt and mark the difference. You will thank me!

The stuffing should not be soggy, runny or mushy nor dry. Create balance!

Can you store Paneer Frankie

You could prepare paneer frankies a day or two ahead and place them in the freezer. But then do not add salad inside the wrap. Serve fresh onion cucumber salad if you must.

If you plan to make ahead, then wrap the rolls individually in foil. Wax paper or sandwich paper tends to become soggy and damp upon storage.

Variations

When in a hurry, you can omit the marinating process. Just crumble the paneer and cook with sautéed onions and spices. A great short cut indeed!

Instead of paneer you can also use tofu..

Soya chunks or potato fillings also would make great stuffing options for frankies.

To serve as appetizers, cut them into half and insert a toothpick to hold the wrap together

You could also buy ready to use tortilla sheets or regular Indian rotis for making frankies.

  • 200 gm fresh paneer
  • 3 tbsp yoghurt
  • 1 tsp garlic roughly chopped.
  • 1 tsp ginger roughly chopped.
  • 2 pcs green chilies roughly chopped.
  • ½ tsp red chili powder
  • ¾ tsp salt
  • ¼ tsp garam masala powder
  • 1 tsp coriander powder
  • ¼ tsp turmeric powder
  • ¼ to ½ tsp chaat masala powder
  • 1 tsp lime juice

Stuffing for Paneer Frankie

  • 2 tbsp Oil
  • 1 cup onions chopped.
  • 1 cup bell peppers chopped.
  • 200 gm Marinated paneer (mentioned above)
  • ¼ tsp salt
  • ¼ tsp coriander powder
  • 1/8 tsp garam masala powder
  • 1 tbsp kasuri methi
  • Fresh coriander leaves chopped.
  • ¼ tsp chaat masala
  • A few drops of tandoori food color

Wrapper sheets

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • ¼ tsp salt
  • ¼ tsp shahjeera caraway seeds
  • ¼ tsp red chili flakes
  • 1 tsp oil
  • Water as needed.

You made me nostalgic reminding me of college days. This use to be one of our go to street food in the afternoons. Making it at home gives us the option to customize it to our palate and is lot healthier.

I remember when Frankie became a rage in India, every festival fete we had in Mombasa, and a frankie stall would be there. Usually attracted a long queue. As paneer was and is expensive, potato frankies were the norm back then. I now have your recipe to follow to make this delicious street food at home.
