What is Sabudana Khichdi
Sabudana Khichdi is a pilaf made from tapioca pearls. Cooking is minimal, required only for sauteing a few ingredients. The soft and soaked sago pearls are slightly sauteed with cumin seeds, curry leaves, peanuts and chilies.
During fasting days of Navratras, Ekadashi or other such festivals, this Sabudana Khichdi is usually prepared without turmeric or table salt.
Though easy to make, it took me some time to master the skill to get the fluffy yet firm pearls-look of Sabudana khichdi. The soft texture of sabudana is complemented with the crunchiness of the peanuts. It appeals to all age groups.
Ingredients
Sabudana – also known as sago, tapioca pearls . Soaked overnight or at least for 3-4 hours.
Potato – Boiled and diced.
Peanuts – shelled, roasted and coarsely pounded. Few whole peanuts.
Green chilies -each slit lengthwise
Rock salt (Sendha namak) to taste – if not fasting then one can use table salt
Cumin seeds – jeera
Black pepper powder
Curry Leaves
Ghee/oil
Juice of 1-2 limes

How to make non sticky fluffy Sabudana Khichdi at home
Firstly, heat ghee/oil in a kadai on medium flame.
Then, add cumin seeds to the hot ghee. When the cumin seeds splutter add the whole peanuts, green chilies and curry leaves.
Keeping the flame on low, add the coarsely crushed toasted peanuts.
After a few seconds add the potatoes, black salt and black pepper powder. Give a gentle stir. When not making during fasting, one can add other spices as well.
Now add the soaked sago. Mix till well combined.
Take off the pan from the flame. Add lemon juice and mix well.
How to serve Sabudana Khichdi
Sabudana Khichdi is best enjoyed on its own. Have it along side with a cup of Karak Chai. If not fasting then Pudina Lassi or is a good choice.
Tips to make Perfect Tapioca Pilaf
Do not add too much water to the sago while soaking. Water must just touch the sago. Check water level every 1 to 2 hours. As the water absorbed by sago pearls they swell. Sprinkle some water over the sago. This renders firm, soft yet separate fluffy tapioca pearls.
Soaking time for sago may vary according to its quality.
Mash one sago peals between your index and thumb.
Do not heat or stir fry the sabudana khichdi for more time otherwise it will become mushy.

Why sabudana khichdi is mushy
If sago is soaked in too much water or the sago is cooked for over 3-5 minutes, the sago pearls will lose luster and become mushy. the soaking water should just touch the surface of sago, As water is absorbed sprinkle few drops of water.
Is sabudana khichdi good for weight loss
Sabudana is rich in calories and carbohydrates so it increases satiety. Hence not the best choice for weight loss.
