What is Exotic Suran Cutlet
Elephant foot yam, also known as suran, may have a dull flavor when eaten alone. Combine it skillfully with onions , herbs and other spices and transform it into an exotic kebab with enhanced flavors. Here, suran or Oal is paired with potato , a few basic spices , dried citrus powder such as mango powder, a binding agent and kewra water for flavor.
Enjoy these kebabs with coriander chutney or sweet tamarind chutney.
Ingredients for Yam Potato Patties
For Measurements refer to the RECIPE CARD further below
Boiled Suran – Add few drops of lime juice while boiling. This prevents elephant foot yam from blackening
Boiled Potato – Do not over boil the potato. It should have a firm texture.
Green chilies – Finely chopped
Ginger – Finely chopped or make a paste.
Onions – Finely chopped
Coriander leaves – Finely chopped for garnishing
Dry spices – salt, turmeric powder- gives a bright color to the cutlets, coriander powder, red chili powder, chaat masala powder – optional, dried mango powder- amchur – can use lime juice- citrus flavors are very much needed for suran recipes.
Roasted chickpea flour – besan, for binding
Breadcrumbs – for binding
Kewra water – gives an exotic flavor. Recommended.

Preparing the cutlet mixture
Firstly, mash or grate boiled potato and yam (suran)
Secondly, add onions, chilies and ginger to the mashed potato-suran mixture.
Thirdly, add the dry spice powders – salt, turmeric powder, coriander powder, red chili powder, dried mango powder and chaat masala.
Then add roasted gram flour and bread crumbs.
Also add chopped coriander leaves.
Lastly, add the kewra water.
Mix everything well to form a smooth mixture
Shaping the Cutlets
Grease your palms.
Take small portions of mixture and shape into round cutlets.
Dust with more bread crumbs.
Repeat method till all cutlets are done.
Frying
Now heat a little oil in a shallow frying pan.
Shallow fry the cutlets on medium heat on one side.
Flip and fry on the other side.
Fry till crispy and brown on both sides.
Drain on absorbent paper.

- 200 gm boiled Suran
- 200 gm boiled Potato adjust according to choice
- ¼ cup onions finely chopped
- 1-2 pcs small green chilies chopped
- 1 tsp ginger finely chopped
- ¼ cup coriander leaves finely chopped
- 1-2 tsp kewra water; optional
- 1 tsp salt
- ¼ tsp turmeric powder; haldi
- 1.5 tsp coriander powder; dhania powder
- ½ tsp red chilli powder
- ¼ tsp chaat masala powder
- ¼ tsp dried mango powder; amchur
- 1-2 tbsp roasted chickpea flour; besan
- ½ cup breadcrumbs; as required
- Oil for frying

The challenge, however is that the name of star ingredient must be in Hindi. This time it is the alphabet ‘O’ so the recipe created is Oal Kebab Oh! How to prevent suran from blackening
While boiling, add a few drops of lime juice or vinegar in the water.
After peeling, keep suran pieces immersed in water till you cook.
How to prevent skin and throat itchiness caused by suran
It is always good to pair suran with potato or sweet potato or any other ingredient. Add some citrus agent like lime juice or dried mango powder to the mixture.
For skin itchiness, apply coconut oil before handling elephant foot yam. Alternatively, you could use hand gloves.
